Skirt Steak Sandwiches

I’m all about sandwiches for dinner—especially when they involve juicy, pan-seared steak, quick-sautéed tomatoes and onions, and crusty baguette. Make sure to pat the steak dry before seasoning. If you don’t, moisture on its surface will prevent the steak from developing the flavorful caramelized crust that makes it so mouthwatering.

COOK TIME: 20 MINUTES

1 pound skirt steak

2 teaspoons ground cumin

Salt

Freshly ground black pepper

4 tablespoons extra-virgin olive oil, divided

1 small onion, thinly sliced

2 roma tomatoes, quartered

2 baguettes, slit lengthwise
